I love Cheesecake. In fact I don’t know many who do not. For me it is the perfect complement to a nice dinner. The creamy richness just finishes nicely with a good cup of coffee. I like to make the New York style cake without the crust. The crust is just a distraction for me, I prefer to focus on the flavor of the cheesecake itself. Now another of my favorite desserts is Key Lime Pie. I love the Keys, and everything about them, One day I may make them my home.
So the thought came to me one day, what if I combine my two favorite desserts? How would the flavors work together, would it be just to overbearing? Or would I stumble upon something amazingly good? Well I like to think the Latter. The flavor combination of the rich and creamy along side the tanginess of the key limes just makes for a wonderful flavor explosion in your mouth. I named this dessert the Down Island Cheesecake in honor of the Conch Republic.
TO make this dessert, the only specialty item you will need is a spring-form pan.
You will want to cut some wax paper and completely line the inside of the pan before you get started. Also you will want to wrap the outside of the pan with foil. I do all this first, that way my pan is prepared and ready to go once the batter is made.
3 8 oz Packages of Cream Cheese
3/4 cup Sugar
1/3 cup Sour Cream
3 Tbsp Flour
1 tsp Vanilla
3 Large Eggs
2/3 cup Key Lime Juice (freshly squeezed please)
1 Tbsp Zest form the Key Limes
Pre- heat your oven to 325 degrees. Then in the bowl of your stand mixer combine the Cream Cheese and the sugar and cream them together. Now add in the Sour Cream and the Flour and combine well. Add the eggs, one at a time, and mix well between each addition. You can also add the Vanilla at this point.
Now turn the speed down to low and add the lime juice and zest. Gently mixing it all together.
Okay, now pour the batter into your prepared spring form pan. and set the pan inside a larger pan. A roasting pan works well for this. Then pour hot water into the pan until it comes half way up the spring form pan. You may want to set the pan on your oven rack before pouring the water in, just for ease of handling.
Bake in the oven for 70-80 Minutes. It should look about like this when it is ready to come out.
Let it cool in the pan for at least half an hour before trying to remove it. Remove all the foil and and turn onto a platter, remove the side of the pan and then the bottom.
Let this chill for a bit, then slice and serve. You could add some fruit topping, but it really needs nothing else. it is a great stand alone dessert. Enjoy!!
