I love oatmeal cookies. Just plain or with some chocolate or butterscotch or even peanut butter chips mixed in. Just no raisins. Never liked em, and I probably never will. This is a really good cookie recipe, they come out nice and fluffy, and soft. The perfect blank canvas for your mix in pleasure.
1 3/4 cups Rolled Oats
3/4 cup Flour
1/2 tsp Baking Soda
1/2 tsp Cinnamon(ceylon if you have it)
1 1/4 sticks Butter, softened
1/4 tsp Salt
1/3 cup Brown Sugar
1/3 cup white Sugar
1 large Egg
1/2 tsp Vanilla
Pre-heat your oven to 375 and grease your cookie sheets. Put all the dry ingredients into one bowl and mix together well. Cream the butter, brown sugar, and white sugar until fluffy. Add the egg and vanilla, and mix well. Now add the dry ingredients to this mixture in batches combining well after each addition.
Using a Tablespoon dish out well rounded spoonfuls onto the cookie sheets and pat down just slightly. Bake in the center position of your oven for about 10 minutes. Let cool slightly and place on cooling rack to finish.
