Bacon Topped Apple Pie- Jumping on the Bacon Bandwagon

The popular theme these days seems to be that bacon just makes everything better. While I have seen and tasted a few things that disprove that, bacon cola comes to mind,if you see it, trust me pass it by. For the most part bacon does play nicely with most foods. When I was a kid every now and then my Mom would surprise me with a peanut butter and bacon sandwich in my school lunch. Good eating those days. Now I’m not going to get into the is bacon healthy for you debate. Seems like every week someone has a different opinion. My Philosophy is like with everything else, moderation is the key.

So with this post we are going to explore the combination of sweet and savory. I love a good apple pie, and add some savory bacon to the mix and it does make it better. Lets start off with the crust. This is just a basic pie crust recipe, I use Butter in mine, If you want to continue with the pork theme you could also use lard instead of butter. It’s up to  you. Get creative and make it your own.

Basic Pie Crust:

21/2 cups All Purpose Flour

1 Tbsp Sugar

3/4 tsp salt

2 Sticks Very cold Butter cut into 1/2 inch cubes

6 Tbsp Ice Water (maybe more Maybe less)

This makes enough dough for 2 9″ crusts. So you can either make 2 pies or cut the ingredients in half.  Combine the flour, sugar, and salt in a bowl and mix together well. Now add the chilled butter and with a pastry cutter, blend until you have pea sized meal texture. Now start adding the water what you are looking for here is moist clumps. form into a ball and separate into 2 equal parts. wrap in plastic and refrigerate over night.

The next day roll out on a well floured board, and form your crusts in your pie plan.

Now for the filling. This is a traditional apple pie filling that my Grandmother taught me a long time ago. Use what ever type of apple you prefer, I am partial to Macintosh, but being away from New England these are hard to find.

Filling :

4- 5 Med Apples Peeled Cored and sliced

2 Tbsp Lemon Juice

1/2 tsp Cinnamon

1/2 tsp Ground Cloves

1/2 tsp Nutmeg(fresh ground please)

1/3 cup Sugar

2 Tbsp Flour

As soon as the apples are sliced, toss them with the lemon juice to keep them from browning. mix all the dry ingredients in a bowl ,then add the apples and toss to coat evenly. Pour this mixture into your crust and set aside. Now make the topping.

6 Strips Apple wood Smoked Bacon

1 cup A.P. Flour

1 cup Brown Sugar

1 Stick Chilled Butter Cut into 1/2 inch cubes

Fry the bacon until crispy and drain on a paper towel. Combine the Flour, Brown Sugar, and butter and mix into a crumb like consistency. Crumble up the bacon and add to this. Spread evenly over the top of your pie and place into a 375 degree oven for 45 mins. You may also want to wrap some foil around the edge of the pie pan to cover the crust, this will keep it from getting too brown. Remove from oven and let cool before serving. Enjoy

Cook from the heart, taste the love
