The other day I found some very good looking boneless sirloin chops in the meat counter. I scratched my head all day thinking about how to prepare them, and still didn’t have a good plan when I got home. Too many distractions at work I guess. How dare they interupt my thought process.
I made this up as I went and the flavors actually blended well. This is one of those ” no measure recipes” I will have to try and come up with proportions next time, but I wanted to share the basics with you.
In a bowl I combined raw honey, raspberry blush vinegar, salt, pepper, dry mustard, and tarragon. Then I whisked it, whisked it good. I say whisk it. Whisk it good. My apologies for the brief Devo possession.
Brushed this mixture onto the chops, then lightly dusted with some cajun seasoning.
I cooked these on a broiler pan at 350 degrees. End result, juicy on the inside, slightly crisp on the outside, and the flavor was sweet with a touch of heat. No leftovers tonite folks.
